Don't Poke Fun at this Recipe

The weather's finally getting warmer here in the Pacific Northwest and my thoughts are turning to outdoor patios, cold drinks, and delicious food. One of the things I love eating outside in nice weather is poke (pronounced poke-ay). Poke is a Hawaiian dish traditionally made with raw seafood(octopus or yellowfin tuna) and some delicious trimmings. Today's Meatless Monday is a fantastic vegetarian take on this amazing Hawaiian meal! The recipe can be found here

There are so many ways to customize this vegetarian poke bowl. My favorite things to do are add pickled cucumber and seaweed salad. What will you add? Have fun!
