My dinner's leeking!

Leeks are a vegetable that I discovered several years ago and immediately fell in love with. They have a milder onion taste and work incredibly well in soups, casseroles, salads, you name it. But leeks are also great on their own! Try this roasted leek recipe and you'll fall in love with this green vegetable, too.

I have two tips for you before you get going. First, set aside some time to make this recipe. It takes about two hours to achieve the perfect roast on these veggies. Second, if you are using leeks for the first time, it can be confusing to try to figure out which part of the leek to use! The image below is helpful. For this recipe, you'll want to use the middle section from the image but the green leaves at the top can be used for vegetable stock!
