Welcome to Two Birds, One Scone!

Welcome! You have arrived at Two Birds, One Scone, an environmental conservation blog that tells the story of one woman's struggle to conserve in a world that encourages convenience and materialism. My aim is to rediscover and cultivate my connection to nature while hopefully inspiring a similar journey in you!

This blog's title comes from a saying I love: "feeding two birds with one scone". It's a play off a more familiar phrase, of course, "killing two birds with one stone". Feeding two birds with one scone better fits my intended purpose of this blog, which is to do the most good with what I have. Resources for aiding the environment are scarce and so this blog will focus on small things we can do in our everyday lives that can make positive impacts on our environment.

Above is a picture I took of one of my favorite places in nature: the coast of Oregon. I promise that the rainbow is real! Every time I visit this beautiful place, I feel a connection to both the ocean and Earth as a whole. Visiting this beautiful place reminds me to be grateful for all of the many benefits the earth gives us, including the opportunity to glimpse its beauty.

Thank you again for visiting Two Birds, One Scone! Please feel free to contact me with any questions or comments you may have!

I can barely look at the photos from this week's Meatless Monday recipe without drooling! Today I'm featuring a vegan take on what the restaurant Wingers calls "Sticky Fingers". You can find the recipe here! Basically, this recipe consists of baked tofu covered in a so...

We sometimes feature desserts for our Meatless Monday recipes because it may surprise you to learn that not all desserts are vegetarian! Jello, marshmallows, Twinkies, Peeps, some types of gummy candy, and some types of fondant are just a few example of sweet treats ma...

Today's Meatless Monday recipe is for a chickpea, fish-free tuna salad! Chickpeas do a great job of replacing the fish in this lunchtime staple. Of course, if you're expecting a tuna-tasting salad, you won't find it with this meatless recipe. However, this salad replic...

My very, very, very, very favorite thing to eat in the summer is watermelon. And yes, I like to put salt on it! It's amazing! Don't knock it until you try it!

Anyway, I've recently upgraded to simply eating watermelon by itself (or with salt) to eating watermelon in an...

Today's recipe is actually seven recipes in one! I've been looking for a great recipe for portable egg muffins because I'm really bad about eating breakfast unless I have something I can grab on the way out the door. This recipe for breakfast egg muffins (find it here)...

Today's recipe is brought to you by my love of chickpeas, crockpots, and the need to make a lot of food quickly. It's a yummy chickpea curry recipe (found here) that you can make as spicy as you'd like to! I found it pairs really well with garlic naan and rice. Enjoy!

It's no secret that if I could eat at Chipotle every day, I would. However, for the sake of both my health and my finances, it's probably better that I don't. My favorite part of a Chipotle burrito is the corn salsa and I recently discovered a copycat recipe that lets...

Even though spring is here, I can't help craving some warm, comforting soup now and again. This Meatless Monday features a vegan version of the soup that's probably most associated with comfort food: chicken noodle! The recipe can be found here and substitutes tofu for...
