Don't Poke Fun at this Recipe
The weather's finally getting warmer here in the Pacific Northwest and my thoughts are turning to outdoor patios, cold drinks, and delicious food. One of the things I love eating outside in nice weather is poke (pronounced poke-ay). Poke is a Hawaiian dish traditionally made with raw seafood(octopus or yellowfin tuna) and some delicious trimmings. Today's Meatless Monday is a fantastic vegetarian take on this amazing Hawaiian meal! The recipe can be found here. Photo credit:

Isle of Dog (Treats)
Today's Meatless Monday is not strictly for human consumption (although if you really want to, you can eat these, too). Today we're making dog treats! I recently made these treats for a new neighbor's dog and although the neighbor hasn't said anything (it's fine, I'm over it) I'm sure the dog loved them. It's not his fault that his owner doesn't write thank-you notes (I swear I'm over it). The recipe is here! Photo credit: http://www.thejerseymomma.com/2016/11/easy-2-ingredie

Molletes: Comida de Guatemala
Today's Meatless Monday is brought to you by a recent trip to Guatemala with my dad. We were lucky enough to attend a fantastic cooking class while we were there, during which we made molletes, a traditional Guatemalan dessert that is usually served on All Saints' Day. My dad was an expert at putting the filling inside the pan dulce. Because the cooking class was held at our Spanish-learning school, we were given a list of pertinent ingredients and verbs. It's served wi

Proof is in the (tofu) pudding
Tofu? In pudding? Yes and yes. This week's Meatless Monday recipe is a perfect example of how tofu can help to create an amazing, creamy texture, especially in desserts. Remember the tofu peanut butter pie? Trust me, this recipe is incredibly delicious and it could not be quicker to make. Try it out and let me know what you thought! The recipe can be found here. #meatlessmondays

Exit strata-gy
Oooh this is a good one, folks. I made this incredible breakfast strata for a big group this weekend and it was a success! Keep in mind that it does require some light planning ahead of time because you have to let the bread soak overnight. That being said, it's very easy to make! Check out the recipe here! The original recipe calls for sausage and bacon but I substituted veggie sausage and bacon, as well as adding some red onion (one of my favorite foods). I'm a big believer

The right stuffed sweet potatoes
Not only are these Mexican stuffed sweet potatoes really easy to make but they're also super, super filling! You probably already have many of the ingredients you need in your pantry! Here's the recipe! Don't forget that all of our featured Meatless Monday recipes can be found on our Pinterest page here! Check them out! The land of tofu and honey (and sriracha)
Honey, sriracha, and tofu go together like peanut butter, jelly, and a third thing that goes with those ingredients. Honey sriracha tofu is delicious and can be paired with a bunch of yummy sides. Here's the recipe! Enjoy! Photo credit: https://www.pickledplum.com/house-foods-honey-sriracha-tofu/ #meatlessmondays

Walk and taquito
I can't believe that I haven't shared this recipe before because it's one that I make all the time. Not only is it vegetarian and delicious but it's also pretty inexpensive to make for a large group of people. These taquitos are full of vegetables and are really tasty, too! Try them out this week and let me know what you think! The link to the recipe is here. Photo credit: https://www.veggieinspired.com/baked-buffalo-vegan-taquitos/ #meatlessmondays

20-Minute Veggie Burgers
I have to confess: I haven't made these burgers myself but I have eaten them. A friend of mine made them recently and they were so, so good that I have to share the recipe with you! Find it here! The whole enchilada
This week's Meatless Monday features enchilada lasagna! It's easy to make and will feed a crowd (or one or two people for a few days). Here's the recipe! The photo below is my take on this recipe. It may not be the neatest dish in the world but it sure was delicious! #meatlessmondays
